Bacon-Wrapped Scallops

Bacon-Wrapped Scallops

Get your dinner party off to an elegant start with this simple bacon-wrapped scallop appetizer.

Ingredients:
  • 14 bacon slices (about 3/4 lbs.)
  • 14 large sea scallops (about 1 lb.), halved
  • 1/2 cup capers, drained
  • toothpicks
Directions:
  1. Cook bacon over moderate heat until edges begin to brown but bacon is still flexible, about 2 minutes. Drain and cool on paper towels.
  2. Cut bacon slices in half. Place 1 scallop half on each slice of bacon, then wrap bacon around scallop and secure with a toothpick.
  3. Place on greased cookie sheet.
  4. Broil scallops, bacon side up towards broiler, 4 to 5 inches from heat, turning once, until bacon is browned and scallops are opaque, about 6 minutes total.
  5. Sprinkle with drained capers. Serve immediately. Refrigerate any leftovers.

Kale Caesar Salad

Kale Caesar Salad

Using kale for this classic salad makes it extra healthy – and delicious!

Ingredients:
  • 6 cups fresh kale, washed
  • 1/2 cup Caesar salad dressing
  • 1 cup sourdough croutons
  • 1/3 cup parmesan cheese, shredded
  • 1 lemon, cut into wedges
Directions:
  1. With a knife, remove center stem from kale leaves.
  2. Stack leaves and shred into ½” strips.
  3. In a bowl, thin dressing with half of the lemon, juiced.
  4. Toss shredded kale with Caesar dressing. Add croutons.
  5. Garnish with shredded Parmesan and lemon wedges over top.

Sesame Ahi Tuna

Sesame Ahi Tuna

Succulent Ahi tuna is quick to prepare and served in many fine dining restaurants.

Ingredients:
  • 1/4 cup low sodium soy sauce
  • 1 clove garlic, minced
  • 1 Tbsp. honey
  • 1 Tbsp. sesame oil
  • 3 Tbsp. fresh cilantro, chopped
  • 2 each Ahi tuna steaks
  • 1/2 cup sesame seeds
  • 1 Tbsp. olive oil
Directions:
  1. In a resealable plastic bag, combine soy sauce, garlic, honey, sesame oil and cilantro. Add tuna and place in refrigerator for 20 minutes.
  2. Meanwhile, lay sesame seeds on a flat plate. Remove tuna from marinade, shaking off excess. Roll in sesame seeds, gently pressing to fish.
  3. Heat olive oil in skillet over medium high heat. Add tuna and sear 2 minutes per side. Serve immediately.

Chanterelle & Crimini Mushroom Risotto

Chanterelle & Crimini Mushroom Risotto

The hearty flavor of two kinds of mushrooms is sure to make this creamy risotto a hit at a winter party.

Ingredients:
  • 1 Tbsp. olive oil
  • 1 clove garlic, crushed
  • 1 1/2 cups onions, chopped
  • 1 tsp. fresh parsley, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. fresh ground black pepper
  • 1 cup fresh crimini mushrooms, sliced
  • 1 cup fresh chanterelle mushrooms, sliced (or your choice of white, oyster, shitake or enokie mushrooms)
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 1 cup Arborio rice
  • 3 cups chicken stock
  • 1 cup Parmesan cheese, grated
  • 3 Tbsp. butter
 
Directions:
  1. Heat olive oil in a large skillet.
  2. Sauté the onion and garlic until onion is tender.
  3. Add parsley, salt, pepper and mushrooms to the skillet. Reduce heat to low, and continue cooking until the mushrooms are soft.
  4. Add the rice and stir for 2 minutes.
  5. Add the chicken stock into the rice one cup at a time, until it is absorbed. Add in milk and cream.
  6. When the rice has finished cooking, stir in the butter and Parmesan cheese, and remove from heat.
  7. Season with additional salt and pepper to taste. Serve hot.

Chocolate Mousse Pie

Chocolate Mousse Pie

Warning! This recipe is for chocolate lovers, only!

Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup powdered cocoa
  • 1/4 cup granulated sugar
  • 1/3 cup butter, melted
  • 2 1/4 cups semi-sweet chocolate, divided
  • 2 cups heavy cream
  • 2 tsp. powdered sugar
  • 1 tsp. vanilla extract
Directions:
  1. Combine graham cracker crumbs, cocoa and sugar in a bowl.
  2. Add butter and blend well.
  3. Press onto the bottom and up the sides of an ungreased 9-inch pie plate.
  4. Microwave 2 cups morsels and 3/4 cup cream in large, glass bowl for 1 minute. Stir. Microwave at additional 10 second intervals, stirring until smooth. Cool to room temperature.
  5. Beat remaining cream, sugars and vanilla extract in chilled mixer bowl until soft peaks form.
  6. Fold 2 cups whipped cream into chocolate mixture.
  7. Spoon into crust; swirl top.
  8. Garnish with remaining whipped cream.
  9. Refrigerate until firm.
  10. Garnish with chocolate drizzle; let stand a few minutes before serving.
  11. For Chocolate Drizzle: Microwave remaining 1/4 cup morsels in glass bowl for about 30 seconds. With a spatula, transfer into a plastic bag. Cut tiny corner from bag; squeeze to drizzle chocolate over pie.
