Ingredients:
  • 1¼ lb. ground turkey
  • 1 medium apple, cored and shredded
  • 2 Tbsp. dry bread crumbs
  • 2 tsp. Dijon mustard
  • ½ tsp. salt
  • ¼ tsp. pepper
  • Vegetable oil
  • ¼ cup barbecue sauce
  • 4 slices sharp Cheddar cheese
  • 4 onion slices
  • 4 lettuce leaves
  • 4 onion buns, split
Directions:
  1. Heat gas or charcoal grill.
  2. In medium bowl, combine turkey, apple, bread crumbs, mustard, salt and pepper. Shape into 4 patties, about ½” thick.
  3. Carefully brush vegetable oil on grill rack.
  4. Place patties on grill over medium-high heat. Cover grill; cook 10-14 minutes, turning halfway, until internal temperature reaches 160°F. Top each patty with 1 tablespoon barbecue sauce and a cheese slice; let stand on grill 1 minute or until cheese begins to melt.
  5. Place lettuce, burgers and onion slices in buns.
  6. Refrigerate leftovers.

Mustard-Beer Marinated Steak

Dark beer brings a bold taste to grilled steak. Make homemade steak sauce from the reserved marinade!

Hands-on Time: 10 min | Total Time: 2 hours 30 min | Serves: 4 | Difficulty: Easy

Ingredients:
  • 1½ lb. top sirloin, about 1½” thick
  • 1 cup dark beer
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. Worcestershire sauce
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 3 cloves garlic, finely chopped
  • 1 Tbsp. tomato paste
Directions:
  1. Place steak in gallon-sized resealable bag; place in shallow dish.
  2. In medium bowl, whisk beer, mustard, Worcestershire sauce, salt, pepper and garlic. Pour over steak. Seal bag; refrigerate 4-24 hours, turning occasionally.
  3. Heat gas or charcoal grill.
  4. Drain steak from marinade; place on grill over medium-high heat. Cover grill; cook 12-14 minutes, turning once for medium-rare (145°F) or 15-18 minutes for medium (160°F). Transfer to platter; tent with foil. Let stand 5 minutes.
  5. Meanwhile, heat marinade in 8" skillet over high heat 4-5 minutes or until reduced to ½ cup. Whisk in tomato sauce.
  6. Slice steak across grain into thin slices. Serve sauce with steak.
  7. Refrigerate leftovers.

Slow cooking doesn’t have to take all day. When cooking on high, chicken breasts cook rather quickly. Just check for doneness with a meat thermometer.

Hands-on Time: 15 min | Total Time: 3 hours | Serves: 5 | Difficulty: Easy

Ingredients:
  • 1 package (20 oz.) boneless skinless chicken breasts
  • 1 medium onion, thinly sliced
  • ½ cup chicken broth
  • 1 tsp. chipotle chili powder
  • ½ cup barbecue sauce
  • 5 hamburger buns
  • 5 lettuce leaves
  • 5 tomato slices
  • 5 Tbsp. guacamole
Directions:
  1. In slow cooker, place chicken breasts, onion, broth and chili powder. Cover and cook on High 1½-2½ hours or Low 4-5 hours or until chicken is tender and internal temperature reaches 165°F.
  2. Remove chicken from slow cooker; drain and reserve liquid.
  3. Cool chicken slightly. With 2 forks, shred chicken; return to slow cooker. Stir in barbecue sauce and 2-3 tablespoons reserved juice to make chicken juicy.
  4. Line bottom of buns with lettuce leaves. Divide chicken among hamburger buns. Top with tomato, guacamole and top of buns.
  5. Refrigerate leftovers.

Ingredients:
  • 1 package. (28 oz.) frozen potato wedges or steak fries
  • ½ lb. white American cheese (queso blanco)
  • ⅓ cup half-and-half
  • 1 Tbsp. pickled jalapeño peppers
  • ¼ tsp. cumin
  • ¼ tsp. chipotle chili powder
  • Toppings, such as chopped tomato, sliced green onion, sliced black olives and chopped cilantro
Directions:
  1. Make potato wedges as directed on package.
  2. Meanwhile, in medium microwavable bowl, heat cheese on High power 3 minutes, stirring after 2 minutes, until softened. Gradually whisk in half-and-half, jalapeño, cumin and chili powder.
  3. Place potato wedges on large platter. Spoon queso sauce over potatoes. Sprinkle with Toppings.

Ingredients:
  • 4 large russet potatoes
  • 2 Tbsp. olive oil
  • ¼ cup grated Parmesan cheese
  • 1 package (0.4 oz.) dry ranch dressing mix
  • Vegetable oil
Directions:
  1. Heat gas or charcoal grill.
  2. Cut each potato lengthwise into 8 wedges. Place in large bowl; toss with olive oil.
  3. In small bowl, stir together Parmesan cheese and ranch dressing.
  4. Sprinkle cheese mixture over potatoes; toss gently to coat.
  5. Carefully brush vegetable oil on grill rack.
  6. Place wedges over medium-high heat on grill. Cover and grill about 12 minutes, turning 3 times, until golden brown and tender.
  7. Refrigerate leftovers.

Ingredients:
  • 1 scoop vanilla ice cream
  • 1 Tbsp. butterscotch syrup
  • ¾ cup cream soda, chilled
  • 1 Tbsp. dark or spiced rum*
  • Whipped cream, if desired
  • Maraschino cherry, if desired
Directions:
  1. Place ice cream in 12 ounce soda glass or other glass.
  2. Drizzle with syrup. Slowly add cream soda and rum.
  3. Top with whipped cream and a cherry.

Drink responsibly.

*For a non-alcoholic float, make as directed except omit rum. Stir ¼ teaspoon rum extract into cream soda before adding to glass.

Directions:
  1. For each sundae, place waffle on dessert plate or in shallow dish.

Zesty Bacon-Wrapped Meatballs

With a touch of Asian flavor, these bacon-wrapped meatballs will be a delicious hit.

Hands-on Time: 5 min | Total Time: 5 min | Serves: 4 | Difficulty: Easy

Ingredients:
  • 1 lb. lean ground beef
  • 1 lb. ground pork
  • ½ cup dry bread crumbs
  • ¼ cup green onion, finely chopped
  • 1 Tbsp. ginger root, finely chopped
  • 1 Tbsp. soy sauce
  • 1 tsp. toasted sesame oil
  • ½ tsp. salt
  • 2 eggs
  • 1 lb. sliced bacon
  • ¼ cup chili or barbecue sauce
  • 2 Tbsp. honey
  • 2 tsp. Sriracha sauce
Directions:
  1. Arrange 2 racks in upper and lower part of oven. Heat oven to 425°F. Line 2 rimmed baking pans with aluminum foil. Spray with cooking spray.
  2. In large bowl, stir together ground beef, ground pork, bread crumbs, green onion, gingerroot, soy sauce, sesame oil, salt and eggs.
  3. Shape into 1½” balls. Cut each slice of bacon into thirds. Wrap bacon around meatball, stretching slightly to fit. Place seam side down on baking pan.
  4. Bake 25-30 minutes or until bacon is browned and meatball reaches at least 160°F. Remove from baking pan to large shallow bowl.
  5. Discard foil; reline pan with clean sheet of foil; spray with cooking spray.
  6. Meanwhile, stir together chili sauce, honey and Sriracha sauce. Gently stir honey mixture into meatballs. Place meatballs in single layer on baking pan. Bake 5 minutes longer or until glaze is set.
  7. Refrigerate leftovers.
Tip:

Meatballs can be baked ahead and refrigerated up to 2 days. Reheat at 350°F for 10 minutes.

Ingredients:
  • 2 tsp. honey
  • 1 tsp. water
  • 3 dashes Angostura bitters
  • 4 blackberries or blueberries
  • 2 small mint leaves
  • 2 oz. whiskey
  • ½ oz. lemon juice
  • Blackberry
  • Mint sprig
  • Lemon twist, if desired
Directions:
  1. In mixing glass, stir together honey, water and bitters to soften honey. Add blackberries and mint leaves; muddle.
  2. Fill glass ¾ with ice; add whiskey and lemon juice. Stir 30 seconds or until very chilled.
  3. Strain into ice-filled lowball glass. Garnish with additional berry and mint. Spritz with lemon peel, if desired.

Dad will love a relaxing day punctuated by a Craft Beer Tasting. Spend a lazy morning together, maybe go out and do something in the afternoon, and then come dinner time, present your surprise—his favorite meal with something new and special.

The week before the holiday, brainstorm ideas for a Father’s Day meal. Make your grocery list, and then when you’re shopping, peruse the store for four or five types of beer he may enjoy trying. Has he pondered certain brands before, only to return to the tried and true? Is there a cool new local brand of beer on the shelf? Has he never ventured into the world of extra dark beer? Now could be a fun opportunity! Make sure to get one beer you know he already likes, just for a dose of the familiar. If you wanted to include members of the family under the age of 21 and those who don’t drink, pick up a couple varieties of root beer so you can make them a flight of their own.

Type up the menu for the evening for an added touch of elegance. Print out a copy of the menu for him and for each person who will be part of the meal. You could take orders in a notebook and present each guest with their personalized meal, or you could serve it all buffet style.

After folks have received their food, bring out the beer flights: set the row of small glasses on a chalkboard for easy labeling. Whether it’s just dad with a flight, or the whole family participating in their own taste tests, this Father’s Day dinner will be memorable.

Sunday, June 18 is Father’s Day! The kids are out of school, summer has begun and it’s the season for fun. What’s your dad’s or husband’s favorite warm-weather activity? This year consider planning a gift package around something you already know he enjoys. It will give the season a fresh spin and let him know you’re interested in spending time together.

Does he love to fish or take the boat out? Use a large cooler as the gift box. Inside you can include cold packs and an insulated water bottle or a flask. Perhaps you could even personalize can coolers. He might also like a new pair of swim trunks, sandals and a beach towel. Does he need a new fishing pole? Tie a big bow on it and he’ll love the surprise! Fishing tackle may fit in the cooler with the other thoughtful gift items, or you could wrap everything separately.

Does your dad have a green thumb? Get your hands on some vegetable and flower starts—young plants that are ready to be transplanted right into the ground this time of year. Include a pair or two of new gardening gloves as well for a fresh start. Other gift ideas could include tools, a knee pad, a sunhat or baseball cap and sunglasses. What does he like to make with the produce he grows? You could get him pickling salt, spices and jars. Gifts could be presented in a tool caddy or wheelbarrow as a nice final touch.

Is Dad the kind of guy who loves grilling? Perhaps he would enjoy some gifts that allow him to step up his game this season. Get a pizza stone (yes, you can put those right on the hot grates!), grilling baskets and heavier duty tools and utensils that might be missing from your grill collection. Does he have an apron? He may need one; grilling can get messy! New sunglasses are often appreciated, as well as a new hat. Treat him to some fancy whisky stones so he can feel like a real king while prepping a meal for the family. You could wrap everything separately and hide inside the grill itself as a surprise on Father’s Day (just make sure the grill is reasonably clean). Enjoy!

Surprise Dad by decorating the kitchen for Father’s Day!

Balloons are an easy way to spice up a room, so choose his favorite colors and put them in corners with curled ribbon. Turn his chair into a throne by securing balloons to it as well. If you wanted to skip the helium, blow up loads of balloons yourself to pool them on the kitchen floor. This way, he’ll have to wade to his breakfast!

Now it’s time to set the table. Flowers make everyone smile, so arrange a fresh, colorful bouquet. Have your little helpers set out the silverware while you get the plates and glasses.

Make bow tie place settings for Dad, using napkins. Simply gather the center of the napkin in between two fingers and use construction paper or printed cardstock strips tape to create a napkin ring. Tape the ends of your paper napkin ring to hold in place. Give every guest a unique bow tie by using different napkins for each place setting, or simply use different paper to personalize one matching set of napkins.

If there are gifts for dad, wrap them in newspaper or comics. Just make sure you use yesterday’s paper! This party plan makes Father’s day as much fun for kids as it is for dad himself.
